Best Ever Chess Pie
- 4 eggs
- 1 1/2 c. sugar
- 1 Tbsp. corn meal
- 1 Tbsp. vinegar
- 1/4 c. evaporated milk
- 1 stick oleo, melted
- 1 tsp. vanilla
- 3/4 c. chocolate chips
- 1 unbaked pie crust
- 2 deep dish unbaked pie shells
- 3 c. sugar
- 1/4 lb. butter
- 1 1/2 c. white corn syrup
- 8 eggs (save 4 egg whites)
- 1/2 c. cornstarch
- 5 lemons (juice and grated rind)
- 2 c. water
- Soften butter and beat until fluffy.
- Add sugar and cream. Then lemon juice and grated rind.
- Add the syrup and the cornstarch, mixed with a little water.
- Then add the rest of the water.
- Last, beat the 4 egg whites until slightly stiff and fold into mixture.
- Pour into unbaked pie shells.
- Bake at 375u0b0 until firm.
- Makes 2 thick pies.
