Mocha Cake

  1. Preheat oven
  2. to

  4. Grease
  5. two
  6. 9-inch round cake pans; coat bottoms and sides of pans lightly with cocoa.
  7. Into a large bowl, measure 2/3 cup cocoa and remaining ingredients except frosting.
  8. With
  9. mixer
  10. at
  11. low
  12. speed, beat until just mixed. Increase
  13. speed to high;
  14. beat 4 minutes.
  15. Pour batter into pans. Bake
  16. 30
  17. minutes
  18. or
  19. until toothpick inserted in center of cake comes out clean.
  20. Cool cake pans on wire racks for 10
  21. minutes. Remove
  22. from pans; cool completely.
  23. Prepare Mocha Butter Frosting.
  24. Place one layer, rounded side down, on cake plate; spread
  25. with
  26. about
  27. 1/3
  28. of
  29. frosting.
  30. Top with second cake layer, rounded side up; frost side and top of cake with remaining frosting.
  31. Makes 16 servings.
