Macadamia Nut Cookies
- 1/2 c. butter, softened
- 1/2 c. shortening
- 3/4 firmly packed brown sugar
- 1/2 c. sugar
- 1 large egg
- 1 1/2 tsp. vanilla extract
- 2 c. all-purpose flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 (6 oz.) pkg. white chocolate chips
- 1 (7 oz.) jar Macadamia nuts, chopped
- Beat butter and shortening at medium speed with electric mixer until soft and creamy; gradually add sugars. Beat well. Add egg and vanilla. Beat well. Combine flour, soda and salt; gradually add to butter mixture, beating well. Stir in white chocolate chips and nuts. Drop by rounded teaspoonfuls 2-inches apart onto lightly greased cookie sheet. Bake at 350u0b0 for 8 to 10 minutes or until lightly browned. Cool. Yields 5 dozen.
