Golden Ham Croquettes
- 3 Tbsp. margarine
- 1/4 to 1/2 tsp. curry powder
- 1/4 c. flour
- 3/4 c. milk
- 2 to 3 Tbsp. prepared mustard
- 1 tsp. grated onion
- 3/4 c. bread crumbs (dry)
- 2 c. coarsely ground ham
- 1 beaten egg
- 2 Tbsp. butter
- 2 Tbsp. flour
- 1/4 tsp. salt
- dash of pepper
- 1/4 c. milk
- 1/2 c. shredded Cheddar
- 1/2 c. Swiss cheese
- In a saucepan, melt butter; stir in flour and curry powder. Gradually add milk.
- Cook, stirring, until bubbly.
- Cook and stir 2 minutes longer.
- Remove from heat and stir in mustard and onion. Add ham.
- Mix well.
- Cover and chill
- thoroughly.
- With wet hands, shape into 10 balls.
- Roll in bread crumbs.
- Shape each into a cone.
- Dip each into egg mixture.
- Roll again in crumbs. Heat oil in a deep fat fryer at 365u0b0.
- Fry a few at a time for 2 to 2 1/2 minutes.
