Stuffed Chayote Pears
- 8 chayote pears
- 2 large onions, chopped fine
- 2 large cloves garlic, chopped
- 1 c. chopped celery
- 2 lb. cooked shrimp
- 1 lb. cooked ham, diced
- 1/2 c. grated Cheddar cheese
- 1/2 c. Italian bread crumbs
- salt and pepper to taste
- approximately 5 Tbsp. butter
- Halve the chayote pears horizontally.
- Remove seed and place in a large Ziploc bag.
- Cook on high 20 minutes.
- Saute ham, onions and garlic with a tablespoon butter until vegetables are transparent.
- Add celery and cook until tender.
- Scoop out cooled chayote pear meat from outside shells.
- Mash chayote pear meat and mix with shrimp and cheese.
- Add to mixture in skillet.
- Add bread crumbs.
- Place in greased 8 x 12-inch casserole dish.
- Cover with additional seasoned bread crumbs and cheese.
- Bake at 350u0b0 for 30 minutes.
- Serves 6 to 8. Can be used as a main dish or side dish.
