Spaghetti Pizza(From A Family Friend, Anna)
- 1/4 lb. spaghetti
- 3 eggs, beaten
- 1 c. salami or mortadella, chopped
- 1 c. Mozzarella cheese, shredded
- 1/2 c. flour
- 1/4 tsp. pepper
- 1/4 tsp. salt
- 1/3 c. Parmesan cheese
- 3 Tbsp. parsley, minced
- 3 Tbsp. olive oil
- Cook spaghetti in
- salted
- water
- according
- to package directions.
- Drain and rinse
- lightly
- in
- cool
- water;
- drain again.
- In large bowl place
- spaghetti
- and
- the
- rest
- of the ingredients except oil and
- toss
- gently.
- Heat oil in 10-inch non-stick frying pan.
- When oil
- is hot, place mixture in pan. Shake pan occasionally so
- pizza
- does
- not stick.
- Lower heat and cover for 7 to 8 minutes.
- Slide pizza onto flat plate and flip pan over top of pizza, so the other side will cook.
- Cook an additional 10
- minutes
- until nicely firm and set.
- Makes 4 servings.
- This is also great as a side dish.
