Old Mission Salad
- 1 ripe avocado
- 1/4 c. vegetable oil
- 2 Tbsp. lemon juice
- 1 clove garlic
- 1/2 tsp. sugar
- 1/2 tsp. salt
- 1/2 tsp. dry mustard
- 3 large navel oranges
- 1 small red onion
- 1 head bibb lettuce, separated into halves
- 2 Tbsp. sliced ripe olives
- Halve avocado; remove pit and peel.
- Slice avocado into container of electric blender; add oil, lemon juice, garlic, sugar, salt and mustard.
- Cover; whirl until smooth.
- Scrape dressing into small serving bowl.
- Pare oranges, removing rind and white membrane.
- Cut into 1/4-inch thick crosswise slices.
- Cut onion into 1/8-inch slices.
- Line large chilled salad plate with lettuce leaves.
- Arrange orange slices overlapping with onions on lettuce. Spoon some of the avocado dressing over top.
- Garnish with olives. Serve with remaining dressing.
