Kentucky Hot Brown
- 1/2 c. butter
- 3 Tbsp. all-purpose flour
- 2 c. milk
- 1 c. grated Colby cheese
- 1 c. grated American cheese
- 1 c. grated Parmesan cheese
- 5 dashes Tabasco sauce or more to taste
- chicken or turkey
- city or country ham
- crisp fried bacon
- sliced tomatoes
- paprika
- toasted white bread
- 2 egg yolks, well beaten
- In a 4-quart, heavy saucepan, melt butter.
- Over medium heat, mix in flour until smooth.
- Add milk slowly, stirring constantly, until thick.
- Add Tabasco sauce and Parmesan cheese.
- Remove from heat.
- Take out 1/2 cup sauce and add the two beaten egg yolks. Mix well and return to the remainder, stirring constantly.
- Add Colby and American cheeses; stir until melted.
- Remove from heat.
