Kentucky Hot Brown

  1. In a 4-quart, heavy saucepan, melt butter.
  2. Over medium heat, mix in flour until smooth.
  3. Add milk slowly, stirring constantly, until thick.
  4. Add Tabasco sauce and Parmesan cheese.
  5. Remove from heat.
  6. Take out 1/2 cup sauce and add the two beaten egg yolks. Mix well and return to the remainder, stirring constantly.
  7. Add Colby and American cheeses; stir until melted.
  8. Remove from heat.
