Irish Soda Bread
- 2 1/2 c. unbleached plain flour
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1/2 tsp. salt
- 2 Tbsp. sugar
- 1 stick margarine
- 2 Tbsp. caraway seed
- 1/2 c. steamed raisins
- 3/4 c. milk
- 3 Tbsp. vinegar
- Preheat oven to 400u0b0.
- Sift together flour, soda, baking powder, salt and sugar.
- Cut margarine into mixture until mixture resembles corn meal. Stir in caraway seed and raisins.
- Set mixture aside.
- Mix together milk and vinegar.
- Let stand for 10 to 15 minutes.
- Add to dry ingredients, mixing until dry ingredients are moistened.
- Spoon batter into greased 8 1/2 x 4 1/2 x 3-inch loaf pan.
- Bake for 40 to 45 minutes or until a wooden pick inserted in center comes out clean.
- Cool in pan 10 minutes; remove from pan and let cool completely on wire rack.
