Black Bottom Cups
- 1 (8 oz.) pkg. cream cheese
- 1 unbeaten egg
- 1/3 c. sugar
- 1/8 tsp. salt
- 1 c. chocolate chips
- 1 1/2 c. flour
- 1 c. sugar
- 1/4 c. cocoa
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 c. water
- 1/3 c. cooking oil
- 1 Tbsp. vinegar
- 1 tsp. vanilla
- Beat together first 4 ingredients.
- Stir in chocolate chips. Sift together following ingredients: flour, sugar, cocoa, baking soda and salt.
- Add water, oil, vinegar and vanilla.
- Beat until well combined.
- Fill muffin cup 1/3 full with chocolate batter. Top each one with heaping teaspoonful cream cheese mixture. Sprinkle with sugar and chopped nuts.
- Bake at 350u0b0 for 30 to 35 minutes.
- Makes 2 dozen.
