Low-Fat Seafood Gumbo
- 8 oz. shrimp
- 1 (6 oz.) pkg. crabmeat
- 1/4 c. all-purpose flour
- 2 c. water
- 1 large onion, chopped
- 1 c. chopped bell pepper
- 4 cloves garlic, minced
- 1 1/2 tsp. instant chicken bouillon granules
- 3/4 c. long grain rice
- 1/3 c. cold water
- 2 c. sliced okra (optional)
- 1/4 tsp. salt
- 1/4 tsp. black pepper
- 1/8 tsp. ground red pepper
- 1 bay leaf
- bottled hot pepper sauce
- Spread flour in a 13 x 9-inch pan.
- Bake at 325u0b0 about 45 minutes, stirring once.
- Meanwhile in a large saucepan, stir water, onion, pepper, garlic and bouillon to a boil.
- Reduce heat; simmer until vegetables are tender.
- Cook rice according to directions, omitting butter and salt.
- Keep warm.
