Arroz Con Pollo(Rice With Chicken)
- 1 (1 1/2 to 2 lb.) pkg. chicken breasts, skin removed
- 1 tsp. vegetable oil
- 2 c. water
- 1 can no salt added stewed tomatoes, chopped (undrained)
- 1 c. chopped onion
- 2 tsp. chicken bouillon granules
- 1 clove garlic, minced
- 1 medium size jalapeno pepper, minced or use dry red pepper flakes
- 1 tsp. pepper
- 1 c. regular rice (uncooked)
- 1/4 c. sliced pimiento stuffed olives, drained
- 2 Tbsp. lime juice
- Rinse chicken with cold water; pat dry.
- Add oil to a 12-inch skillet.
- Add chicken and cook 4 minutes on each side or until browned.
- Remove chicken; drain on paper towels.
- Wipe skillet with a paper towel; coat with Pam cooking spray and add chicken to skillet.
- Combine water and next 6 ingredients; pour over chicken. Cover and cook over medium heat 15 minutes.
- Add rice; cover and cook over medium heat 20 minutes or until tender.
- Remove from heat and stir in olives.
- Sprinkle with lime juice.
