Cream Of Carrot Soup(This Is A Winner!)
- 6 large carrots, pared and cut up
- 1 tsp. sugar
- 1 tsp. salt
- 2 Tbsp. flour
- 1/8 tsp. pepper
- 1 chicken breast, cooked
- 1 qt. milk
- 2 Tbsp. butter
- 3/4 c. cream
- pinch of nutmeg
- 1/4 lb. bacon, diced and blanched (keep grease)
- 2 medium onions, chopped
- 1 qt. chicken soup
- 1/2 tsp. thyme leaves
- 8 Tbsp. butter
- 1 qt. milk
- 3 (6 1/2 oz.) cans minced clams
- 6 stalks celery, cut thin
- 2 Tbsp. butter
- black pepper
- 1 1/2 lb. potatoes
- 6 Tbsp. flour
- 4 very ripe, diced tomatoes
- parsley (to garnish)
- 7 fresh oysters
- 1/2 c. clam liquid
- celery salt, Worcestershire and paprika
- 2 Tbsp. butter
- 1 c. milk
- In a deep pan, place a dash of Worcestershire and paprika, about 1/2 teaspoon celery salt and 1 tablespoon butter; bring to boiling, then add oysters and clam juice.
- Cook until edges of oysters curl.
- Add milk; bring to boil and pour into bowl.
- Top with 1 tablespoon butter and paprika.
