Zucchini Appetizers
- 3 c. thinly sliced zucchini
- 1 c. Bisquick
- 1/2 c. finely chopped onion
- 2 1/2 c. grated cheese
- 2 Tbsp. fresh parsley or 1 Tbsp. dried
- 1 red and 1 green chopped pepper
- 1/2 tsp. seasoned salt
- 1/2 tsp. oregano leaves
- dash of pepper
- 1 clove garlic, minced or garlic powder
- 1/2 c. vegetable oil
- 3 or 4 Tbsp. milk
- 5 eggs, slightly beaten
- 4 or 5 small canned chili peppers, cut fine
- Mix all ingredients including only 2 cups of cheese.
- Spread in a greased 9 x 13-inch pan.
- Sprinkle remaining 1/2 cup cheese over top.
- Bake at 350u0b0 until set and light brown (about 30 minutes).
- Cut into 2 x 1-inch squares.
- Yield:
- 48 squares.
