Taco Salad
- 1 (6 to 9 oz.) pkg. Mexican cornbread mix
- 1 can chopped green chilies
- 1 pkg. dry ranch dressing mix
- 8 oz. sour cream
- 1 c. mayonnaise
- 2 cans pinto beans, drained
- 1 c. chopped bell pepper
- 2 cans corn, drained
- 3 large tomatoes, chopped
- 10 slices bacon, fried and crumbled
- 8 oz. cheddar cheese, shredded
- 1 c. green onions, chopped
- 1 head lettuce, chopped
- Ranch dressing
- Prepare cornbread and add green chilies to batter, bake according to package directions. Make ranch dressing with dressing mix, sour cream and mayonnaise; set aside. Layer lettuce, crumbled cornbread, beans, bell pepper, corn, bacon and green onion in a large bowl. Repeat layers. Top with cheese and tomatoes. Serve with ranch dressing.
