Indian Cornbread

  1. Shred 1 pound (2 cups) Cheddar cheese.
  2. Set aside.
  3. Chop 1 medium onion and bell pepper.
  4. Set aside.
  5. Brown 1 pound ground meat in an iron skillet; empty all meat and grease out of skillet. Mix in a mixing bowl:
  6. 1 c cornmeal, 1 (16 oz) can creamed corn, 1 c milk, 1 egg, 1 tsp baking powder, and 1/4 tsp soda.
  7. Pour 1/3 meal mixture into skillet.
  8. Put meat, onions, pepper, then cheese, being careful not to let cheese touch sides.
  9. Bake in preheated 425u0b0 oven for 55 minutes or until golden brown.
  10. Let cool in pan 10 - 15 minutes for cheese to set before cutting.
  11. Then cut in pan, or turn out on plate.
