Indian Cornbread
- 2 c Cheddar cheese
- 1 med onion, chopped
- 1 med bell pepper, chopped
- 1 lb ground meat
- 1 c cornmeal
- 1 (16 oz) can creamed corn
- 1 c milk
- 1 egg
- 1 tsp baking powder
- 1/4 tsp soda
- Shred 1 pound (2 cups) Cheddar cheese.
- Set aside.
- Chop 1 medium onion and bell pepper.
- Set aside.
- Brown 1 pound ground meat in an iron skillet; empty all meat and grease out of skillet. Mix in a mixing bowl:
- 1 c cornmeal, 1 (16 oz) can creamed corn, 1 c milk, 1 egg, 1 tsp baking powder, and 1/4 tsp soda.
- Pour 1/3 meal mixture into skillet.
- Put meat, onions, pepper, then cheese, being careful not to let cheese touch sides.
- Bake in preheated 425u0b0 oven for 55 minutes or until golden brown.
- Let cool in pan 10 - 15 minutes for cheese to set before cutting.
- Then cut in pan, or turn out on plate.
