Simple Greek Shrimp
- 1/4 c. butter or margarine
- 1 large green bell pepper, seeded and chopped
- 1 large onion, chopped
- 1 (20 oz.) can stewed tomatoes
- 2 c. clam broth
- 1/2 c. dry white wine
- 1 c. white or brown rice (raw)
- 1 lb. medium size shrimp, cooked until pink
- 2 (6 1/2 oz.) cans minced clams, drained (optional)
- 1 c. Feta cheese, crumbled
- In an electric skillet, melt the butter over low heat.
- Add the green pepper and onion; saute until crisp-tender (about five minutes).
- Add the tomatoes and clam broth, the wine and rice. Increase the heat to medium-high and boil for 25 to 30 minutes. Add the shrimp and clams; reduce the heat to medium.
- Simmer for three minutes.
- Transfer to a serving dish; sprinkle with the Feta cheese.
