Sweet And Sour Pork
- 1 (20 oz.) can unsweetened pineapple chunks (undrained)
- vegetable cooking spray
- 1 1/2 lb. lean boneless pork, cut into 1 inch cubes
- 1/2 c. chicken broth
- 1/4 c. vinegar
- 1 Tbsp. brown sugar
- 1 Tbsp. plus 1 tsp. soy sauce
- 1/2 tsp. ground ginger
- 1 medium-size green pepper, cut into thin strips
- 1 small onion, cut thin
- 2 Tbsp. cornstarch
- 2 Tbsp. dry sherry
- 4 c. hot cooked rice
- Drain
- pineapple, reserve juices;
- settside.toat
- a large skillet with cooking spray,
- medium heat until hot.
- Add pork, brown on all sides.
- Remove
- pork, drain on paper towel. Wipe skillet with paper towel, return pork to skillet, stir in reserved pineapple juice, broth, vinegar, sugar, soy sauce and ginger. Bring to boil,
- cover,
- reduce
- heat, simmer 20 to 25 minutes or until
- pork is tender.
- Add pineapple, green pepper and onion, cover and simmer 4 to 5 minutes or until vegetables are tender. Combine
- cornstarch and sherry, stir until blended, pour over pork mixture.
- Cook, stirring constantly, until thickened and bubbly.
- Serve over rice.
- Makes 8 servings.
