Beef Hominy Casserole
- 1 lb. ground beef
- 1 can large grain hominy
- 3 large onions, sliced
- 1 bell pepper, chopped
- 4 Tbsp. cooking oil
- 1/4 to 1/2 tsp. chili powder
- 1 can tomato sauce
- 2 Tbsp. butter, melted
- 2 Tbsp. flour
- 1 c. milk
- 1 c. grated cheese
- salt and pepper to taste
- Fry onion and bell pepper in oil until tender.
- Add ground beef and brown; add drained hominy, seasonings, and tomato sauce. Place in greased baking dish.
- Prepare sauce by combining melted butter, flour, milk and one-half of the grated cheese.
- Cook slowly until thickened, stirring constantly.
- Pour over beef-hominy mixture and sprinkle remaining cheese on top.
- Bake 35 minutes in 350u0b0 oven.
- Serves 8.
