Bacon Fettucini
- 6 slices bacon, cut in 3-inch pieces
- 1 tsp. olive oil or regular oil
- 3/4 c. chopped onions
- 1 large red pepper, chopped
- 1/4 tsp. fennel seed
- 1/4 tsp. dried thyme
- 1/4 tsp. white pepper
- 1/2 tsp. red pepper flakes
- 1/2 c. chicken broth
- 4 to 6 cloves garlic
- 1/2 c. whipping cream
- 1 tsp. salt
- 1 box fettucini
- 1 (4 oz.) box Blue cheese
- about 2 Tbsp. Parmesan cheese
- Cook bacon in olive oil; remove and save.
- Add onions, pepper and garlic.
- Saute 3 to 5 minutes.
- Add spices except salt.
- Cook 2 to 4 minutes more.
- Add chicken broth; cook 5 more minutes. Transfer all to blender and puree; return to pan and add cream. Simmer 4 to 5 minutes.
- Add Blue cheese.
- Melt over low heat. Cook fettucini in water with salt.
- Drain and pour into bowl. Toss with sauce.
- Top with bacon and Parmesan cheese.
