Oven Fried Chicken
- 3 lb. cut up chicken
- 1 c. flour
- 1 Tbsp. paprika
- 1 (16 oz.) carton plain nonfat yogurt
- 2 c. instant mashed potato buds
- 1/4 c. Parmesan cheese
- 1 tsp. Italian seasoning
- salt and pepper to taste
- nonstick cooking spray
- 2 Tbsp. olive oil
- Remove skin from chicken parts.
- In a bowl, combine flour and paprika.
- Drain liquid from yogurt.
- Place in another bowl. Combine mashed potato buds, Parmesan cheese, Italian seasoning and salt and pepper in a third bowl.
- First, dredge the skinned chicken parts in flour mixture.
- Then dip the chicken into the yogurt.
- Finally roll the chicken into the potato bud mixture. Place on a nonstick pan that has been sprayed with nonstick cooking spray.
- Lightly drizzle the olive oil over the chicken. Bake in a 350u0b0 oven for 60 minutes or until golden brown.
