Georgia Style Brunswick Stew
- 1 lb. fresh pork sausage
- 1 lb. ground beef
- 4 to 6 c. chicken, stewed and stock
- 2 small cans tomato paste
- 1 can green small limas
- 3 tsp. salt
- 1/2 tsp. pepper
- 1/2 tsp. paprika
- 2 Tbsp. Worcestershire sauce
- 1/2 tsp. Tabasco sauce
- 2 c. ground onions
- 2 c. ground celery
- 2 cans tomato sauce
- 3 medium potatoes, diced
- Scramble ground sausage in heavy pot.
- Add beef, scrambling so it will not lump.
- When browned, drain off fat and add chicken and stock with vegetables, tomato sauce and paste.
- Bring to simmer and cook for several hours in open pot. Add seasonings and hot water, if needed, while cooking.
- Add beans just before serving. Serve with barbecue.
