Zucchini-Chip Omelet

  1. Preheat oven to 350u0b0.
  2. In large skillet melt butter and saute onion
  3. and
  4. garlic
  5. until golden brown.
  6. Remove garlic. Add zucchini,
  7. salt and pepper.
  8. Cook, covered, 5 to 7 minutes until zucchini is fork-tender. Beat eggs with milk and cheese. Combine zucchini
  9. and
  10. egg
  11. mixture
  12. in 1 1/2 quart casserole. Sprinkle with potato chips and paprika.
  13. Bake about 20 minutes until firm and set.
  14. Makes 6 generous servings.
