Zucchini-Chip Omelet
- 3 Tbsp. butter or margarine
- 1 medium onion, thinly sliced
- 1 clove garlic
- 2 lb. zucchini, coarsely grated
- 1 1/2 tsp. salt
- 1/4 tsp. pepper
- 2 eggs, unbeaten
- 1/2 c. milk
- 1/3 c. grated Parmesan cheese
- 1/2 c. potato chips, coarsely crushed
- paprika
- Preheat oven to 350u0b0.
- In large skillet melt butter and saute onion

- garlic
- until golden brown.
- Remove garlic. Add zucchini,
- salt and pepper.
- Cook, covered, 5 to 7 minutes until zucchini is fork-tender. Beat eggs with milk and cheese. Combine zucchini
- and
- egg
- mixture
- in 1 1/2 quart casserole. Sprinkle with potato chips and paprika.
- Bake about 20 minutes until firm and set.
- Makes 6 generous servings.
