Shrimp Scampi
- 1/4 c. (1/2 stick) butter or margarine
- 1/4 c. salad or olive oil
- 2 Tbsp. chopped parsley
- 1 Tbsp. garlic powder
- 1/2 tsp. salt
- dash of ground red pepper
- 2 Tbsp. lemon juice
- 1 lb. large fresh shrimp, shelled and deveined
- lemon wedges (optional)
- Preheat oven to 400u0b0.
- In large skillet with metal handle or heatproof serving dish, melt butter.
- Add oil, half the parsley, garlic powder, salt, red pepper and lemon juice; mix well.
- Add shrimp, tossing gently with butter mixture.
- Arrange in skillet in single layer.
- Bake for 8 to 10 minutes, or just until tender. Sprinkle with rest of chopped parsley.
- Bring skillet to the table.
- Garnish with lemon wedges, if desired.
- Makes 4 servings.
