Super Scalloped Potatoes
- 1/4 c. Margarine
- 1/2 c. Chopped Onion
- 1 pkg. 16 0z. Frozen Hashed Browned Potatoes
- 1 can Cream of Mushroom Soup
- 1 Soup Can of Milk
- 1 c. Cheddar Cheese, shredded
- 1 sm. Green Pepper, cut into strips
- 2 Tbsp. Chopped Pimiento
- 1 c. Cheddar Cheese, shredded
- Cracker Crumbs
- In a skillet melt the margarine over a medium heat, saute the onion until tender.
- Stir in the soup and milk, stir until creamy, then add the potatoes.
- Add the green pepper, pimiento, 1 cup of cheese and 1/2 of the crumbs.
- Stir together, pour into a shallow pan sprayed with PAM.
- Sprinkle the remaining cheese and cracker crumbe over the top.
- Bake at 375u0b0 for about 40 - 50 minutes. Serves 6.
