Super Scalloped Potatoes

  1. In a skillet melt the margarine over a medium heat, saute the onion until tender.
  2. Stir in the soup and milk, stir until creamy, then add the potatoes.
  3. Add the green pepper, pimiento, 1 cup of cheese and 1/2 of the crumbs.
  4. Stir together, pour into a shallow pan sprayed with PAM.
  5. Sprinkle the remaining cheese and cracker crumbe over the top.
  6. Bake at 375u0b0 for about 40 - 50 minutes. Serves 6.
