Flan(Practically Fat-Free)

  1. Caramelize 3/4 cup sugar in heavy skillet over medium heat until a rich brown color. Pour in 13 x 9 x 2-inch oval baking dish, rotating to cover the sides evenly (warm dish first). Cool. In a large bowl, beat egg substitute. Gradually add remaining sugar. In a large saucepan on medium heat, stir milk and cinnamon stick. When milk bubbles, remove stick, then slowly add milk mixture to egg mixture, stirring constantly. Stir in vanilla. Place all combined ingredients into the oval baking dish. Place in a larger baking dish and add water to 1-inch height in the outer pan. Bake in a preheated 325u0b0 oven, uncovered, about 90 minutes. Because of all the fat-free ingredients, it takes longer to set up. Cool on wire rack and refrigerate up to 6 hours before unmolding. Loosen edges of flan with a spatula and invert. Rectangle cooking pans will do; ovals are prettier. Serves 8.
