Fruit Bars
- 1/4 c. water
- 1 Tbsp. unflavored gelatin
- 1 c. dried apricots
- 1 c. raisins
- 1 tsp. rum flavoring (optional)
- 1 c. pecans
- 1 Tbsp. flour
- 2 Tbsp. grated orange peel
- Place water in a saucepan.
- Sprinkle gelatin over water. Allow gelatin to soften for 5 minutes.
- Stir over low heat to dissolve gelatin.
- Combine remaining ingredients in a large bowl. Place mixture into a blender, 1/3 at a time.
- Blend until mixture has a coarse texture, but contains not large chunks.
- Add blended ingredients to gelatin in saucepan; stir well.
- Line bottom and sides of an 8-inch square pan with wax paper.
- Spray wax paper with a nonstick spray.
- Spread mixture in pan.
- Cool completely in refrigerator until firm, about 2 to 3 hours.
- Cut into 24 bars. Store bars between layers of wax paper.
- Yields 24 bars.
