Black Bean And Bulgur Chili

  1. Bean Preparation:
  2. One pound of dried beans will make about 6 cups, cooked and drained.
  3. After picking out stones, rinse. Transfer to big pot.
  4. Cover with 3 quarts of water.
  5. Bring to boil for several minutes and then soak.
  6. Drain, rinse and cover with water plus 1/2-inch for cooking process.
  7. Bring to simmer; cover pot and cook for 1 1/2 hours or until tender.
