Black Bean And Bulgur Chili
- 1 lb. black beans (dry) or 5 to 6 c., cooked and drained
- 1 c. bulgur wheat (dry) or 3 c. cooked
- 2 Tbsp. olive oil
- 10 oz. onion, chopped
- 2 oz. garlic, chopped
- 8 oz. carrot, coarsely grated
- 8 oz. celery, chopped
- 8 oz. green pepper
- 28 oz. can crushed tomato in tomato paste
- 3 tsp. basil
- 3 tsp. cumin
- 3 to 5 tsp. chili powder
- 1/2 c. fresh chopped cilantro
- 2 tsp. salt
- black pepper, cayenne pepper and water (as needed) to taste
- Bean Preparation:
- One pound of dried beans will make about 6 cups, cooked and drained.
- After picking out stones, rinse. Transfer to big pot.
- Cover with 3 quarts of water.
- Bring to boil for several minutes and then soak.
- Drain, rinse and cover with water plus 1/2-inch for cooking process.
- Bring to simmer; cover pot and cook for 1 1/2 hours or until tender.
