Chicken With Rice (Arroz Con Pollo)
- 2 1/2 to 3 lb. fryer, cut up
- 2 c. rice
- 2 medium onions (1 chopped)
- 1 medium green pepper (half chopped)
- 1 Tbsp. vinegar
- 3 garlic cloves, mashed
- 1/2 c. tomato sauce
- 4 Tbsp. olive oil
- 4 c. chicken broth
- 1 (8 oz.) can sweet peas
- 1 (4 oz.) can pimentos
- 4 Tbsp. parsley
- saffron
- 2 tsp. salt
- 1/4 tsp. black pepper
- 1 bay leaf
- 1/4 c. cooking dry wine
- asparagus (optional)
- Cut chicken in pieces and cook in the pressure cooker, with 4 cups of water, salt, 1 onion, 1/2 green pepper and 1 tablespoon of vinegar for 15 minutes.
- Bone the chicken and break meat in pieces about 1 x 2-inches.
- Keep the broth after straining it.
- Put the oil in a large skillet; add garlic, chopped onion and green pepper.
