Double Cooked Pork

  1. Boil the whole pork with a little wine, ginger and green onion for 30 minutes.
  2. Remove.
  3. When cool, cut into very thin slices. Cut the green and red peppers into 1-inch squares.
  4. Slice garlic. You may use green garlic if you have. Mix sweet soybean paste with soy sauce, sugar and hot bean paste in a bowl.
  5. Stir-fry pork slices in 3 tablespoons oil for 1 minute.
  6. Add garlic, green and red peppers; stir 1 more minute.
  7. Remove from pan.
  8. Use the remaining oil to stir-fry the sweet soybean paste for 10 seconds. Return pork mixture.
  9. Stir well and serve.
