Tropical Dried Fruit Choc Chip Cookies With A Crunch
- 1/2 cup butter or 1/2 cup margarine, softened
- 1 cup brown sugar
- 1 large egg
- 1/2 teaspoon vanilla
- 1 cup flour
- 1/4 teaspoon baking powder
- 1 cup Rice Krispies
- 1/2 cup chocolate chips (more if desired)
- 1/2 cup shredded coconut
- 3/4 cup dried pineapple, cut to size
- Preheat oven to 350u0b0F and lightly spray cookie sheet with cooking spray.
- Combine butter and brown sugar until light and fluffy.
- Beat in egg and vanilla; mix well.
- Sift together flower and baking powder, gradually incorporate into wet mixture.
- Fold in remaining ingredients.
- Drop heaping spoonfuls or roll 1 inch balls of batter onto cookie sheet; bake 15 minutes until tops are golden brown.
