Cranberry Surprise Salad
- 2 c. cranberries
- 1/2 c. sugar
- 1 pkg. Knox gelatine
- 2 Tbsp. sugar
- 1 c. hot water
- 1/4 tsp. salt
- 2 Tbsp. lemon juice plus 1 tsp. lemon rind, grated
- 1/2 c. mayonnaise
- 8 1/2 oz. can pineapple or 1 orange or 1 apple, diced and peeled
- 1/4 c. walnuts, chopped
- Chop cranberries;
- addtugar and let stand 10 minutes. Mix gelatine with
- sugar
- and
- salt;
- add
- to
- hot water until dissolved.tdd lemon juice, rind and mayo to gelatine mixture and blend with beater.tuick chill this mixture in refrigerator tray, 15 minutes or until firm, 1 inch from edge, but soft in center. Then

- into
- 1 quart mold and chill until firm.tnmold on lettuce.
- Top with mayo.
- Serves 6.
