Baked Beans(Abington Grange Supper)

  1. Pick over the beans and soak them overnight in cold water.
  2. In the morning, parboil the beans until the skins crack when blown upon.
  3. If an onion is used, cut in quarters and put in bottom of bean pot.
  4. Add the parboiled beans.
  5. Cut through the rind of the salt pork to a depth of 1/2-inch.
  6. Place the pork on top of the beans; mix the sugar, molasses, mustard, pepper and salt with 1 pint boiling water.
  7. Pour this over the beans and pork.
  8. If necessary, add more boiling water to cover.
  9. Bake at 300u0b0 for 5 or 6 hours, adding more boiling water as the beans cook.
