Apple Harvest Squares
- 1 1/2 c. all-purpose flour
- 1/2 tsp. salt
- 1 c. sugar, divided
- 1/2 c. butter or margarine
- 4 c. sliced, peeled apples
- 2 Tbsp. lemon juice
- 1 tsp. ground cinnamon
- 1 egg, lightly beaten
- 1/3 c. evaporated milk
- 1 tsp. vanilla extract
- 3/4 c. chopped nuts
- 1 1/3 c. flaked coconut
- 3/4 c. butter (at room temperature)
- 1 c. sugar
- 1 egg
- 1 1/2 tsp. vanilla
- 1/2 tsp. salt
- 2 c. flour
- 1 1/2 c. shredded coconut
- 8 oz. apricot preserves
- 1 c. walnuts, chopped
- Preheat oven to 350u0b0.
- Cream butter, sugar, egg and vanilla. Mix in salt, flour and coconut and stir well.
- Reserve 3/4 cup for topping.
- Spread the rest in a greased 9 x 11-inch pan.
- Spread apricot preserves over mixture.
- Sprinkle nuts over preserves. Crumble reserved 3/4 cup dough over top.
- Bake 30 minutes.
- Cool slightly and cut into 24 bars.
