Amaretto Cheesecake
- Crust
- 1 cup vanilla wafer crumbs
- 1/2 cup toasted almond, ground
- 2 tablespoons sugar
- 1/4 cup melted butter
- Filling
- 2 lbs cream cheese
- 1 cup sugar
- 3 tablespoons flour
- 4 eggs
- 1 cup sour cream
- 1/4 cup amaretto liqueur
- 1 teaspoon almond extract
- Topping
- 1/2 cup sour cream
- 2 tablespoons sugar
- 1 teaspoon amaretto liqueur
- 1/3 cup toasted sliced almonds
- Combine the crust ingredients. Press onto bottom of a greased 9-inch springform pan. Set aside.
- In a large bowl, beat cream cheese, sugar, and flour; mixing well until blended. Add eggs, one at a time, beating until well blended. Blend in sour cream, liquer, and extract; pour over crust. Bake at 450u0b0 for 10 minutes. Reduce heat to 250u0b0. Continue baking for 55 minutes.
- Combine topping ingredients except almonds and spread over cheesecake. Evenly sprinkle on almonds. Continue baking 5 more minutes.
- Cool on wire rack.
- Chill in refrigerator several hours before serving.
