Chicken Pasta Primavera
- 1 pkg. boneless chicken breasts
- 2 Tbsp. vegetable oil
- 4 green onions, cut in julienne strips
- 2 tsp. minced garlic
- 1 lb. zucchini (2 c.), cut in strips
- 1/2 c. dry white wine
- 3 carrots (in julienne strips)
- 1 c. chicken broth
- 1/4 c. fresh parsley
- 1/2 tsp. dried oregano
- 1/2 tsp. pepper
- spaghetti or angel hair
- 1/3 c. grated Parmesan cheese
- Slice chicken into thin strips.
- Saute over medium-high heat with 1 tablespoon of oil; add green onions and garlic.
- Saute for 1 minute.
- Heat remaining oil in skillet; add zucchini and carrots and saute 2 minutes.
- Stir in broth, wine, parsley, oregano and pepper.
- Simmer 1/2 hour.
- Serve over pasta; sprinkle with cheese.
