Applesauce Bread
- 1 3/4 c. all-purpose flour
- 2 tsp. baking powder
- 1 tsp. cinnamon
- 1/2 tsp. baking soda
- 1 c. granola cereal
- 1 c. applesauce
- 2/3 c. sugar
- 1/2 tsp. salt
- 1/2 tsp. nutmeg
- 1/3 c. butter or margarine
- 2 eggs, slightly beaten
- Mix flour, sugar, baking powder, salt, spices and baking soda in bowl.
- Cut in butter with pastry blender or 2 knives until mixture resembles coarse crumbs.
- Stir in cereal.
- Fold in eggs and applesauce and stir just until flour is moistened.
- Pour into 2 greased 8 x 4-inch loaf pans or four 5 x 2-inch baby loaf pans. Bake at 350u0b0 for 45 minutes or until cake tester inserted in center comes out clean.
- Cool in pans 10 minutes.
- Remove from pans and finish cooling on rack.
