Chicken And Broccoli
- 2 pkg. frozen broccoli, cooked and drained
- 3 whole chicken breasts
- 2 cans cream of chicken soup
- 1 c. mayonnaise
- 1 tsp. lemon juice
- 1 tsp. salad mustard
- 1/2 tsp. curry powder
- 1/2 c. Cheddar cheese, shredded
- 1/2 c. soft bread crumbs
- 1 tsp. melted butter
- 1 small can water chestnuts, sliced (optional)
- Simmer chicken in water with onion, stalk of celery, salt and pepper for 1 hour; cool and slice into pieces.
- Mix soup, mayonnaise, curry powder, lemon juice, mustard and water chestnuts.
- Layer in casserole dish:
- broccoli, chicken, soup mixture and cheese.
- Repeat layers.
- Top with bread crumbs and melted butter.
- You can also use Pepperidge Farm stuffing.
- Bake at 350u0b0 for 45 minutes.
- Serves 8 to 10.
