Tofu Mexican Casserole
- 3/4 c. onion, chopped
- 2 Tbsp. salad oil
- 1 (28 oz.) can tomatoes
- 1 (1 1/4 oz.) pkg. taco seasoning mix
- 1/2 tsp. salt
- 1 (4 oz.) can chopped green chilies
- 1 (7 1/2 oz.) pkg. tortilla chips
- 1 lb. Jack cheese, grated
- 1 (17 oz.) pkg. tofu, crumbled
- 1/2 c. cheese, grated
- Saute onion in oil until tender. Add tomatoes, taco seasoning mix, salt and green chilies.
- Simmer, uncovered, 10 to 15 minutes. In a
- lightly greased 2-quart casserole, arrange 1/2 of each of the following in layers:
- tortilla chips, sauce, cheese and tofu. Repeat layers.
- Bake in a 350u0b0 oven for 25 minutes. Sprinkle with cheese and bake an additional 10 minutes.
- Let stand for 10 minutes before cutting into squares.
- Serves 6 to 8.
