Oletha'S Hominy
- 1 large can white hominy
- 1 large can yellow hominy
- 1 pt. sour cream
- 1 can Ortega chilies, chopped
- 1/2 medium onion, grated
- 3 strips bacon, fried and crumbled
- 4 oz. Cheddar cheese, grated
- 4 oz. Monterey Jack cheese, grated
- 1/2 c. butter (1 stick)
- 1 large onion, minced
- 1 1/2 lb. mushrooms, sliced thin
- 2 large cloves garlic, minced
- 4 eggs
- 1 c. milk
- 6 slices egg bread (1/4-inch cubes, white bread is okay)
- salt and pepper
- pinch of nutmeg
- pinch of chili powder
- Melt butter in large skillet over medium heat.
- Add onion and saute about 5 minutes until tender.
- Add mushrooms and garlic and saute about 3 minutes.
- Remove from heat.
- In a bowl, combine eggs and milk; add bread and blend in seasonings.
- Add mushroom mixture and stir gently.
- Taste and adjust seasoning.
- Spoon into baking dish.
- Bake at 350u0b0 for about 1 hour.
