Vegetable Sandwiches 1
- 1 c. finely chopped cabbage
- 1/2 c. chopped green bell pepper
- 1 large cucumber, chopped
- 4 carrots, chopped
- 1 medium onion, chopped
- 1 envelope unflavored gelatin
- 3/4 c. mayonnaise
- 1/4 c. water
- 2 1/2 Tbsp. vinegar
- 1/2 tsp. Worcestershire sauce
- 2 Tbsp. sugar
- 2 tsp. salt
- 1/4 tsp. pepper
- 1/2 tsp. paprika
- Combine cabbage, bell pepper, cucumber, carrots and onion, blending well.
- In a saucepan, soften gelatin in water.
- Add vinegar, Worcestershire sauce, sugar, salt, pepper and paprika. Cook over medium heat until gelatin dissolves, stirring constantly.
- Blend into vegetables.
- Refrigerate to let flavors meld at least 1 day, preferably 2.
- Add mayonnaise just before serving.
- Makes about 10 sandwiches or 30 finger sandwiches.
