Oriental Beef And Broccoli

  1. Slice steak at an angle, 1/4-inch thick.
  2. Slice about 2-inches long.
  3. Combine sherry, cornstarch, soy sauce, ginger and sugar in a bowl.
  4. Add beef slices, mix well and set aside.
  5. Cut broccoli flowerets into bite-size pieces.
  6. Peel stalks and slice diagonally into small pieces.
  7. Dry with paper towel and sprinkle with salt. Heat 2 tablespoons oil in wok.
  8. Add broccoli and cook quickly while stirring, until bright and crisp.
  9. Remove from pan and keep warm. Add remaining oil to pan and heat.
  10. Stir in beef mixture, water chestnuts and scallions.
  11. Cook quickly until beef is cooked to desired degree of doneness (about 2 minutes).
  12. Add broccoli and serve with rice.
