Acorn Squash Rustica

  1. Carefully cut squash in half horizontally (not through stem end). Remove seeds and stringy portions.
  2. Using 1 tsp. butter, rub the cut surfaces of squash.
  3. Place cut-side-up in shallow baking pan with 1/2 inch water.
  4. In small skillet melt 2 tsp. butter. Saute onions and celery until tender.
  5. In medium bowl combine sauteed vegetables, prepared stuffing, turkey and orange pieces. Spoon into squash halves.
  6. Cover squash loosely with foil. Bake in preheated 375u0b0 oven for 30 minutes. Remove foil, bake 15 minutes longer or until squash is tender and stuffing is lightly browned. Let stand 5 minutes before serving.
  7. Makes 2 servings.
