Lemon Streusel Muffins

  1. Preheat oven to 350u0b0; line 12- cup muffin pan with paper liners.
  2. Topping-in a small bowl, combine flour, sugar, and lemon zest; mix in butter until streusel is crumbly; refrigerate until ready to use.
  3. Muffins-in a big bowl, whisk together flour, baking powder, baking soda, and salt.
  4. In another bowl, whisk together sugar, eggs, oil, and vanilla until well blended.
  5. Whisk in milk, lemon zest, and lemon juice until blended.
  6. Add the egg mixture to the flour mixture and stir until just blended.
  7. Divide batter evenly among prepared muffin cups; sprinkle with topping.
  8. Bake for 20-25 minutes or until tops are golden and a pick comes out clean.
  9. Let cool in pan on wire rack for 3 minutes, then transfer muffins to wire rack to cool.
  10. Serve these delicately flavored muffins with a cup of hot tea.
