Applesauce Fruit Cake
- 3 c. flour
- 1 1/4 c. sugar
- 3/4 c. butter
- 2 c. warm applesauce
- 1 c. raisins
- 1 c. chopped nuts
- 1 c. chopped dates (optional)
- 1 tbsp. cocoa
- 1 tsp. cinnamon
- 1 tsp. allspice
- 1 tsp. nutmeg
- 1 c. sour milk
- 1 1/2 tsp. baking powder
- 1/4 lb. candied fruit
- 1 c. coconut
- 2 to 3 tsp. grated orange rind (optional)
- Cream butter; add warm applesauce.
- Add sour milk in which soda has been dissolved.
- Sift dry ingredients together and add to first mixture.
- Add fruits and nuts which have been dredged in flour.
- Add coconut and grated orange rind.
- Pour into well-greased and floured cake pan or 5 (1-pound) tins.
- Bake in very moderate oven (305u0b0 to 325u0b0) about 1 to 1 1/2 hours.
