Okra Casserole
- 1 1/2 lb. fresh or frozen okra, sliced
- 1 to 2 Tbsp. bacon drippings
- 1 medium onion, sliced
- 1 bell pepper, sliced
- 1/2 can sliced water chestnuts
- 1/2 c. chopped green olives
- 1 to 2 tomatoes, cut in eighths
- 2 stalks celery, diagonally cut
- 1 tsp. chicken bouillon
- Saute okra in bacon drippings over medium heat for 2 to 3 minutes,
- just
- enough to get it all good and hot.
- Turn out into a
- 2
- quart greased casserole.
- Saute onion, bell pepper and celery
- until
- crisp-tender.
- Layer vegetables over okra. Put water
- chestnuts
- in
- casserole
- with olives and mix with other vegetables.
- Arrange
- tomatoes
- over
- the
- top.
- Bake, uncovered, at 350u0b0 for 20 minutes.
- Makes 8 servings.
