Chicken Marbella

  1. Preheat oven to 350u0b0.
  2. In a large bowl combine chicken quarters, garlic, oregano, pepper, salt, vinegar, olive oil, prunes, olives, capers and juice and bay leaves.
  3. Arrange chicken in a single layer in 2 large shallow baking pans and spoon marinade over evenly.
  4. Sprinkle chickens with brown sugar and pour white wine around them.
  5. Bake for 50 minutes to 1 hour, basting frequently with pan juices.
  6. With slotted spoon, transfer chicken, prunes, olives and capers to platter.
  7. Sprinkle with parsley or cilantro.
