Citrus Slices
- 1/2 c. shortening
- 1/2 c. butter
- 3 c. flour
- 1 c. sugar
- 1 egg
- 1/4 tsp. baking soda
- 1 tsp. lemon or orange juice
- 1 tsp. grated lemon or orange peel
- 1 tsp. vanilla
- 1/4 tsp. salt
- Beat shortening and butter in large bowl until softened, about 30 seconds.
- Add about 1/2 of the flour.
- Add sugar, lemon or orange juice, vanilla, baking soda and salt.
- Beat until thoroughly mixed, scraping sides of bowl.
- Beat in lemon or orange peel and remaining flour.
- Shape dough into two logs and wrap in plastic wrap or wax paper.
- Chill 4 to 24 hours.
- Roll logs in colored sugar.
- Cut dough into 1/4-inch slices; cut each slice in half.
- Bake at 375u0b0 for 8 to 10 minutes until edges are firm. Transfer to racks and cool.
- Makes about 60 cookies.
- Glaze with Citrus Glaze.
