Hearty Beef Soup
- 1 lb. ground beef
- 1 large onion, chopped
- minced garlic
- 1 can beef bouillon
- 3 c. boiling water
- 2 (1 lb. 12 oz.) cans Italian tomatoes
- 1 c. red cooking wine
- 1 tsp. Italian herbs
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 (8 oz.) pkg. beef Rice-A-Roni
- 4 c. frozen mixed vegetables
- Brown ground beef in large kettle, breaking it up with a spoon as it cooks.
- Add onion and garlic.
- Cook, stirring occasionally until soft.
- Stir in beef bouillon, water, tomatoes, wine, herbs, salt and pepper.
- Bring to boil; lower heat and simmer 30 minutes. Add rice and vegetables.
- Simmer 20 minutes longer.
- Makes 10 to 12 servings.
- Freezes well.
- This is thick soup; when reheated, add beef bouillon and water.
