Banana Coffee Muffins
- 2 1/2 cups unsifted all-purpose flour
- 1 cup sugar
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 tablespoon instant coffee granules
- 1 tablespoon hot water
- 1 cup margarine or 1 cup butter
- 1 egg
- 1 1/3 cups mashed bananas (about 4 bananas)
- 1 cup semi-sweet chocolate chips
- Prheat oven to 400 degrees.
- Line 2 dozen muffin cups.
- Stir together flour, baking powder, baking soda and salt. Set aside.
- Dissolve coffee in the hot water and stir into bananas.
- Beat together sugar and butter until fluffy.
- Add egg, then banana mixture.
- Stir in flour. Mix until well blended.
- Fold in chocolate chips.
- Divide into cups.
- Bake for 25 - 30 minutes.
- You can put it into 2 loaf pans and bake at 350 degrees for 45-50 minutes until a toothpick comes out clean too!
